What it is
Brilliant Black BN is a synthetic bis-azo dye giving a true black.
How it is used in food
One of the few colours that gives a genuine black rather than a very dark brown.

Health and safety
It is very poorly absorbed from the gut. Occasional intolerance reactions are reported in sensitive individuals. It is not one of the six colours that must carry the EU hyperactivity warning.
EFSA re-evaluated E151 in 2010 and kept an ADI of 5 mg/kg body weight per day, finding no safety concern at reported intakes.
