What it is
A natural fiber extracted from oats, rich in beta-glucans, used to thicken foods.
How it is used in food
Oat gum is a concentrated preparation of oat β-glucan, the soluble fibre that thickens porridge, and it functions as a thickener, stabiliser and fat replacer. Its main value is physiological: the viscosity it creates in the small intestine traps bile acids and slows glucose absorption, which lowers LDL cholesterol and blunts post-meal blood-sugar spikes.

Health and safety
Extremely safe and actively beneficial for heart health and cholesterol reduction.
EFSA authorised health claims for oat β-glucan on maintenance of normal blood cholesterol (3 g/day) and reduction of post-prandial glucose rise, concluding the evidence base was sufficient — an unusually strong verdict. Meta-analyses of controlled trials (Whitehead et al., 2014) find roughly a 0.25 mmol/L reduction in LDL cholesterol at 3 g/day. Safety is not in question: β-glucan is a normal constituent of a common cereal, with the only reported effects being gastrointestinal fullness or gas at high intakes. People with coeliac disease should note that oats are often cross-contaminated with gluten-containing grains unless certified.

Oat β-glucan carries one of the very few health claims that regulators worldwide have accepted for a food ingredient — EFSA, the FDA and others all allow cholesterol-lowering and blood-glucose claims for it. The effect depends on molecular weight and viscosity, so processing that shears the β-glucan into shorter chains can destroy the benefit even though the fibre content on the label stays the same.
