Potassium pectate is the potassium salt of pectic acid, used as a thickener, gelling agent and stabiliser with the same calcium-reactive behaviour as other pectates, and it offers the formulation advantage of adding potassium rather than sodium — relevant for reduced-sodium products. It is soluble dietary fibre that passes through the small intestine intact and is fermented in the colon to short-chain fatty acids.

Potassium pectate is covered by the group evaluations of pectin and pectic substances, for which JECFA and EFSA have concluded an ADI 'not specified' on the basis that they are non-absorbed polysaccharides with no evidence of toxicity or genotoxicity. In the EU only pectin (E 440i) and amidated pectin (E 440ii) are authorised, so the individual pectate salts are not found in European products. The only intake-related considerations are the bloating typical of soluble fibre at high doses and, for people with impaired kidney function who must limit potassium, the contribution of the counter-ion.

The choice of counter-ion in a hydrocolloid is not cosmetic: swapping sodium for potassium changes solubility, gel strength and how the ingredient interacts with other salts in the recipe, and in low-sodium reformulation projects it lets manufacturers keep texture while cutting the sodium figure on the nutrition panel.
