What it is
Methylcellulose (E461) is a chemically modified cellulose (plant fibre). It has a unique "thermal gelation" property: unlike most thickeners that melt when hot, methylcellulose forms a solid gel when heated and turns back into a liquid when cooled.

It’s what holds plant-based burgers together on the grill.

How it is made
It is made by reacting natural cellulose (often from wood pulp) with methyl chloride and sodium hydroxide.
- Alkalization — Wood pulp or cotton linters are treated with a strong alkali like sodium hydroxide.
- Etherification — The alkalized cellulose is reacted with methyl chloride to produce methylcellulose.
