What it is
A hydrocarbon gas used alongside butane to propel food products from aerosol cans.
How it is used in food
Propane has a high vapour pressure, which makes it useful for producing a fine, even mist at low temperatures and for keeping spray performance consistent as a can empties. It is tasteless, non-reactive with food components, and blankets the product with an oxygen-free atmosphere, extending the shelf life of oil-based sprays without any additive remaining in the food itself.

JECFA assigned propane an "ADI not specified", the category reserved for substances of such low toxicological concern that a numerical limit adds nothing. Toxicology is essentially inhalation-based rather than dietary: propane is a simple asphyxiant and mild central-nervous-system depressant at very high airborne concentrations, and neither scenario is reachable through food, where residues are measured in trace amounts that leave with the spray.

Propane is a food propellant, a barbecue fuel and a refrigerant (R-290) — the identical molecule in each case, differing only in purity grade. Food-grade propane is purified to remove the odorants and sulphur compounds deliberately added to fuel-grade gas so that leaks can be smelled.
